B.A.M.! Frittata (aka Keto Pizza) GF/Keto/Low-Carb

This recipe is so great because it follows our guidelines of SIMPLE, SUSTAINABLE & FUN!  And even better, it is super versatile and well-liked by many tastes!  B.A.M! By the way, that stands for Bacon, Artichoke Hearts, Mushrooms…in case you were wondering.

Whether you follow a low-carb, Keto or gluten-free lifestyle, this recipe will work for you.  If you are also dairy-free, you can easily substitute the dairy ingredients with non-dairy or omit completely!  If you are vegetarian, you can take out the bacon and add in another veggie.  If you don’t like artichoke hearts…well…we might have to part ways here…JUST KIDDING!!!

This meal is great for dinner or breakfast…heck it can even be served at lunch, brunch or linner!  Leftovers are also good.  Hmmm…we can’t come up with one negative about this super easy-to-make meal.  Try it for yourself!

Ingredients (serves 8):

Directions:

  1. Preheat oven to 425°F
  2. In a medium bowl, scramble eggs with cream until light and fluffy.  Add salt & pepper.  Add in chopped veggies and bacon.
  3. Grease OVEN SAFE pan with butter or non-stick spray.  Pour egg mixture into pan and let cook until sides start pull away from the pan (approx. 5-10 minutes).
  4. Put entire pan in oven (MAKE SURE IT IS OVEN SAFE!) to continue cooking (approx. 10 minutes).  The frittata is done when the egg mixture no longer jiggles if you shake the pan (NOTE: DON’T FORGET YOUR OVEN MIT!  THE PAN WILL BE EXTREMELY HOT).
  5. When frittata is cooked, take out of oven and sprinkle with cheese.  Change oven setting to BROIL. Place pan back in oven and broil for approx. 5 minutes (until cheese is bubbly on top).
  6. Take out of oven and cut into 8 slices.  Enjoy!

We find the key to extra fluffy eggs is to add a splash of dairy (cream, half and half or milk) and then whip the eggs up with an electric hand mixer, blender or stick blender to really work some air into the mixture!
